Asparagus with new potatoes & smoked ham
Ingredients for 4 servings
- 2kg white & green asparagus
- approx. 800g small new potatoes
- approx. 200–250g smoked ham
- 100g butter
- 1 teaspoon sugar
- 1 teaspoon salt
- Some fresh parsley to sprinkle on top
preparation
1. Prepare the asparagus: Peel the asparagus thoroughly (from just below the head to the end), cut off any woody ends.
2. Cook the asparagus: Bring a large pot of water to a boil with a pinch of salt, sugar, and a knob of butter. Add the asparagus spears and let them cook for 8–16 minutes, depending on their thickness. Green asparagus cooks faster.
3. Boil potatoes: Wash the new potatoes thoroughly and boil them in salted water with the skin on for about 20 minutes. Then drain and toss with butter and parsley.
4. To serve: Arrange asparagus, potatoes and ham on plates and drizzle with melted butter.
Tip: If you like, serve it with a classic hollandaise sauce – or simply rely on good butter.
